Jasper Yeast US Ale III JY173 A yeast rumored to be from one of the biggest hop driven breweries in California. Very clean and neutral and fast fermenting. Ester production is low, neutral in flavor and aroma. Alcohol tolerance is high for demanding fermentations. Premature spunding can result in elevated sulfur production and loss of hop aromatics. Beers are best when they have had a good diacetyl rest.
