Potassium metabisulphite can be used as a sanitizer and to kill the wild yeast on fruit. Sanitizer - use 2 oz per 1 gallon of water. Antioxidant & bactericide - use 2/3 teaspoon to 5 gallons. Dissolve sulphite in warm water before adding.
